Where to eat well in Sucre? Our 4 must-visit spots

From the morning salteña to the evening tasting menu, Bolivia's constitutional capital reveals itself at the table.

Who would say no to a gourmet menu for less than €30 per person? Sucre, often overshadowed by La Paz, nevertheless hides some gastronomic treasures that you must discover during your visit.

Here is our selection:

1. El Solar - Bolivian cuisine reinvented

El Solar is the kind of place travelers whisper about. A restaurant run by locals who have chosen to elevate their own culinary heritage. The menu, entirely seasonal, comes in 9 or 12 courses, and each dish tells a story about Bolivia.

Why we love it

For us, it’s essential to spend our money not at soulless big chains, but at restaurants (or inns, brands, shops, etc.) that have meaning, run by locals, etc. El Solar embodies exactly that: local produce, reimagined recipes, a cuisine with meaning. No chain, no unnecessary frills - just sincerity on the plate.

Tip: Choose the 12-course menu if you want a complete experience. Plan on about 2h30 at the table; it's a real occasion.

Nestled in the heart of the Parador Santa Maria Real hotel, Terraza 625 welcomes you from its elevated perch with stunning views over the white rooftops of Sucre's historic center. Already a UNESCO World Heritage site, the neighborhood takes on an entirely different dimension when seen from above, cocktail in hand.

Why we love it

The hotel restaurant Parador Santa Maria Real is in the big leagues: a refined tapas menu, carefully crafted cocktails, and decor that oscillates between understated luxury and colonial charm. A perfect place for a slightly dressier evening, or simply to treat yourself after a day of sightseeing.

3. Saltenería El Patio - The local breakfast institution

There are places that have existed for 40 years and do not need to justify themselves. Saltenería El Patio is one of them.

Why we love it

Known for serving the best Saltenas in the city (or even the country, depending on who you ask) for 40 years, this restaurant located in a former palace will offer you a journey between local breakfast and century-old architecture.

Plan B : If the line is too long when it opens, come back around 10-11 a.m. There are generally fewer people and the salteñas are still hot.

Practical information

  • Type : Café-restaurant, salteña specialist

  • Price : €0.80 to €1.10 per salteña

  • Hours : Monday to Sunday, 8 a.m.-1 p.m.

  • Address : San Alberto 18, Sucre

4. Proyecto Nativa - Bolivian haute gastronomy

If El Solar whetted your appetite for reimagined Bolivian cuisine, Proyecto Nativa takes things even further. We’re talking fine dining here, with a tasting menu that explores flavors, textures, and ingredients you’ve probably never encountered anywhere else.

Why we love it

Proyecto Nativa is considered one of the best restaurants in the country, and you can taste it from the very first bites. Each dish invites you to discover Bolivia from a new angle: unique ingredients, meticulous presentation, and a story behind every plate. Going there means giving in to a true culinary adventure centered on distinctive, refined dishes.

Tip : Book well in advance, as spaces are limited and the room fills up quickly. Ideally 2 to 3 days ahead in high season.

  • Hours: Monday to Saturday, 6pm-9:30pm
